If it smells bad then you have over cooked or burnt the spinach. I know this because I have done it before and I know that horrible smell!
I now warm everything up in my mini Crock Pot.
And don't forget to rinse the oil off the sun dried tomatoes or it will be very over powering and heavy tasting.

Did not turn out as I expected, didn't melt, and was best when cold w/chips. Worst of all is everyone at the party kept asking what smelled so bad.....we finally realized it was the dip. Thankfully they were all close family!

Spinach is my family''s favorite veggie. This is a good east recipe, but we like to spice things up a bit. Add a dash of chili powder, allspice, and garlic powder. Then to give a bit more texture we added half to a whole can of artichoke hearts drained and mashed up a bit by hands (the boys did this with "extra" enthusiasm ;-) ). As a last little extra a drizzle of olive oil of a decent quality makes the dip a little more spreadable. If you are lucky enough to have leftovers this is great to add as a topping to omlettes.
