cups Cinnamon Chex® cereal

cups Honey Nut Chex® cereal

cup butter or margarine
1/4
cup packed brown sugar

tablespoons honey

teaspoon ground cinnamon

teaspoon ground nutmeg
1/4
teaspoon ground cloves
1
teaspoon rum flavoring
2
cups miniature marshmallows

  • 1 In large microwavable bowl, place cereals. In 2-cup microwavable measuring cup, microwave butter, brown sugar and honey uncovered on High 2 minutes, stirring after 1 minute, until mixture is bubbly. Stir in spices and rum flavoring. Pour over cereal mixture, stirring until coated.
  • 2 Microwave uncovered on High 3 minutes, stirring and scraping bowl after every minute.
  • 3 Cool slightly; about 5 minutes. Stir in marshmallows. Spread on waxed paper. Store in airtight container.

I made a batch yesterday and another this morning to send back to college with my daughter. I'm headed back to the store so that I can make another 2 batches to send to work with the hubby and me. Hubby doesn't want marshmallows so we are going to try dry roasted peanuts in with the cereal so that they get the candy coating, too. If you buy 2 boxes of Honey Nut, 1 box of Cinnamon and 2 bags of mini marshmallows, you can get 4 batches.

I made this and I used melted cinnamon butter then topped it off with cinnamon/sugar grinder. Thanks for the yummy recipe I will make this again

I made some adjustments too, just because I used what was on hand.. almond instead of rum, Honey Nut Cheerios instead of the Honey Nut Chex... and chocolate marshmallows instead of regular minis.. very simple, very good and easy to adjust to what you have on hand.

This is really good! I was skeptical at first about trying it, but I'm glad I did! It smells similar to the smell of karmelkorn when it's cooking, but the taste is totally unique! It tasted really good! I substituted Honey-Nut Cheerios and some Quaker LIFE cereal for the Honey-Nut Chex, since we had none on hand. I also replaced half of the rum flavor with vanilla extract. I was even able to use spreadable tub butter instead of the stick kind. Still turned out great!

This is quite yummy. Different from lots of other mixes. Worth a try.
