cup chopped onion

apples, peeled, sliced

tablespoon honey

tablespoon Dijon mustard

teaspoon coriander seed, crushed

teaspoon salt

to 2 1/2 lb rolled boneless pork loin roast

tablespoon cornstarch
2
tablespoons water

  • 1 In 4 to 6-quart slow cooker, combine onion and apples. In small bowl, combine honey, mustard, coriander and salt; mix well. Spread on all sides of pork roast. Place pork over onion and apples.
  • 2 Cover; cook on Low setting 7 to 8 hours.
  • 3 Remove pork from slow cooker; place on serving platter. Cover with foil.
  • 4 In small saucepan, blend water and cornstarch until smooth. Add apple mixture and juices from slow cooker; mix well. Cook over medium heat until mixture boils, stirring occasionally. Cut pork into slices. Serve pork with sauce.

Expert Tips

Pork loin roast has little fat, so will dry out if it is overcooked. For longer cooking (more than 8 hours), use a boneless shoulder roast instead.

Very yummy! I used ground coriander because it was what I had in the cupboard and it worked out fine. Next time I won't leave it in as long because it did overcook a bit, but that was my own misjudgment. The sauce is delicious and added a bit of zest when poured over the rice as well as the meat. Will make again!
