The flavor combination was very tasty but the pork did seem dry without any sauce on it. I cooked the carrots for 1 hour so they would be done more to our liking. I will probably try the recipe again but will occasionally baste the meat to attempt a juicier outcome.

This came out great! Wonderful flavor. I do agree that while it was tender maybe just a bit dry but all the sauce fixed that. Maybe next time I will cook for a little less time. In regards to leftovers this was fabulous reheated stir-fry style w/ a little EVOO and rice all in one skillit!

The flavor was ok. Pork seemed to be dry and the carrots wasn't as sweet and done and we thought. I won't make it again.

The family enjoyed the flavor, I found the pork to be dry when eaten though it was easy to cut, the juices are definetly needed. The carrots were definetly not done after 30min I would put them in at the beginning with the pork. I am sure the leftovers will be great today, the pork has been soaking in the juices and the carrots will be cooked again.
