Honey Barbecue Pork Roast with Carrots (Cooking for Two)

lb boneless pork loin roast or sirloin roast, trimmed of fat

tablespoons barbecue sauce

teaspoons honey
1 1/2
teaspoons balsamic vinegar

teaspoon soy sauce

teaspoon ginger
Dash pepper

cup Green Giant® frozen honey glazed carrots, thawed

  • 1 Spray 1 1/2-quart slow cooker with cooking spray. In cooker, place pork roast. In 1-cup measuring cup, stir together barbecue sauce, honey, balsamic vinegar, soy sauce, ginger and pepper; pour over pork.
  • 2 Cover; cook on Low heat setting 4 to 5 hours.
  • 3 Place carrots around pork. Increase heat setting to High. Cover; cook about 30 minutes or until carrots are crisp-tender. Remove pork from cooker to cutting board with slotted spoon. Cut pork into slices; place on serving platter. Top pork with sauce and carrots.

Expert Tips

If desired, thinly slice 1 small onion and place in slow cooker. Place pork on top of onion and cook as directed.

If desired, substitute 3/4 lb thick-cut pork chops for pork loin roast.

With three people in our household, I doubled the meat, and the sauce. I also used two containers of the honey glazed carrots and put another single serving of the glaze in with it. The meat was so tender it pretty much melted in the mouth. Very delicious dinner, and will be definitely making it again!!

It was super quick to put together but the sauce turned out so thin it ran off the meat. On the up side, the meat turned out really tender.

+ 1/4 cup of water (to reduce dryness of meat) Double up on sauce to be added when carrots are added. + 1 quartered potatoe (I used yellow) to the meat about and hr b4 adding the carrots
