THAW TWO REFRIGERATED PIE CRUST/DOUGH
3 MED/LARGE
MED/LARGE PEELED AND THINLY SLICED YAMS

CUP EGG NOG
1
TBLS MOLASSES
1/4
CUP MELTED BUTTER
1
TEASPOON VANILLA OR RUM FLAVOR
1
TBLS ORANGE JUICE
1
TBLS CINNAMON SUGAR
½ CUP BROWN SUGAR
1
TEASPOON OF NUTMEG
1
TEASPOON SALT
1
TEASPOON CREAM OF TARTER

  • 1 MIX YAMS AND EGG NOG IN A LARGE BOWL. ADD MOLASSES, MELTED BUTTER, VANILLA OR RUM AND ORANGE JUICE, MIX WELL.
  • 2 ADD CINNAMON SUGAR, NUTMEG, BROWN SUGAR, SALT AND CREAM OF TARTER, MIX WELL, SET ASIDE.
  • 3 LAY ONE THAWED PIE CRUST DOUGH IN BOTTOM OF LIGHTLY OILED PIE PAN (SUGGEST GLASS). LAY SECOND PIE CRUST DOUGH ON FLOURED BOARD. USE PIZZA CUTTER OR BUTTER KNIFE TO CUT DOUGH INTO STRIPS, ABOUT 10.
  • 4 POUR YAM MIXTURE INTO PIE PAN, THEN WEAVE DOUGH STRIPS OVER THE TOP. SPRINKLE TOP WITH CINNAMON SUGAR.
  • 5 OPTIONAL: ADD MARSH MELLOWS AND/OR RAISINS, CRANBERRIES TO OPEN HOLES ON TOP 10 MINS. BEFORE DONE.
  • 6 BAKE APPROX. 25-30 MINS.

If you want to make throughout the year, you can buy egg nog in the can for future use.
