Herbed Mustard-Coated Chicken

Ingredients

tablespoons Dijon mustard

tablespoons Italian dressing
1
large clove garlic, minced
1/2
cup soft bread crumbs

tablespoons chopped fresh Italian parsley

tablespoon chopped fresh thyme
1/4
teaspoon coarse ground black pepper

tablespoons butter or margarine, melted
4
boneless skinless chicken breasts (about 1 lb)

Directions

  1. 1 Heat oven to 425°F. Spray 15x10x1-inch pan with cooking spray. In small bowl, mix mustard, Italian dressing and garlic.
  2. 2 In another small bowl, mix bread crumbs, parsley, thyme and pepper. Stir in butter.
  3. 3 Spread mustard mixture on both sides of each chicken breast; place in pan. Spoon bread crumb mixture evenly on top of chicken; press in firmly.
  4. 4 Bake uncovered 15 to 20 minutes or until juice of chicken is clear when center of thickest part is cut (170°F). If desired, cut chicken breasts diagonally into slices before serving.
