Assuming you dip the basting brush into the butter mixture, then onto the chicken as it's cooking, then back into the butter mixture, any remaining uncooked butter mixture should be discarded to avoid contamination from the raw chicken.
Serve the chicken with sprigs of fresh thyme, sage or rosemary.
Round out the meal with steamed green beans, boiled red-skinned potatoes and yellow or red cherry tomatoes. For dessert, offer brownies and ice cream.
