Herb Cheese-Stuffed Chicken Breasts

Ingredients

boneless skinless chicken breasts (1 lb)

oz feta cheese, crumbled (1/2 cup)
1/4
cup chopped fresh parsley

teaspoons chopped fresh or 1/4 teaspoon dried oregano leaves

tablespoons olive or vegetable oil

cans (14.5 oz each) diced tomatoes with Italian-style herbs, undrained

cup sliced ripe olives

teaspoons cornstarch

Directions

  1. 1 Heat oven to 350°F. With sharp knife, cut 3-inch slit in meaty side of each chicken breast to form pocket.
  2. 2 In small bowl, mix cheese, parsley, oregano and oil. Gently spoon 1/4 of mixture into each pocket. Place chicken in ungreased 13x9-inch (3-quart) glass baking dish.
  3. 3 In medium bowl, mix remaining ingredients; pour over chicken.
  4. 4 Bake 35 to 40 minutes or until juice of chicken is clear when center of thickest part is cut (170°F).
