I made these with egg substitute and they were very good; just had to adjust the cooking time for desired doneness. Also used regular onion, finely chopped, since I don't normally have green onions on hand. Will make again.

Simple and tastes terrific!! We have created many versions from this one recipe--each one delicious as the next. To mimic a restaurant chain, we add cooked sausage to the raw egg mixture, bake, and top with sausage gravy right before serving. Perfect breakfast for a day of football viewing!!!

Delicious! My daughter has Celiac Disease, and cooking breakfast can be challenging, but she loves this dish. We like the eggs with a soft yolk, so I separated the eggs. I cooked potato mixture with the egg whites until almost set, then added the yolk and cooked for several additional minutes. Yum!
