Instead of making a stovetop full of omelets at the last minute, serve a do-ahead frittata so you can enjoy your guests while your oven does the work.

Ingredients

cups finely crushed herb-seasoned stuffing mix

(9-oz.) pkg. Green Giant™ Frozen Spinach, thawed, squeezed to drain*

(24-oz.) container (3 cups) nonfat cottage cheese
1
(4-oz.) pkg. (1 cup) crumbled garlic-herb flavored feta cheese

cup chopped 97% fat-free cooked ham

Steps

  • 1 Spray two 9-inch glass pie pans with nonstick cooking spray. Sprinkle 2 tablespoons stuffing crumbs evenly over bottom of each pan. Reserve 1/4 cup crumbs for topping.
  • 2 In large bowl, beat eggs and egg whites. Stir in remaining 1 1/4 cups crumbs and all remaining ingredients; mix well. Carefully spread mixture evenly over crumbs in pans. Cover with plastic wrap; refrigerate at least 4 hours or overnight.
  • 3 Heat oven to 350°F. Uncover pans; sprinkle each with 2 tablespoons reserved crumbs. Bake at 350°F. for 45 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving. Cut into wedges to serve.

Expert Tips

* To quickly thaw spinach, cut small slit in center of pouch; microwave on HIGH for 2 to 3 minutes or until thawed. Remove spinach from pouch; squeeze dry with paper towels.
