Ingredients

teaspoons Dijon or yellow mustard
2
teaspoons mayonnaise or salad dressing
2
Pillsbury® Grands!® frozen buttermilk or southern style biscuits (from 25-oz bag)
1/2
teaspoon butter or margarine
2
eggs
1/4
cup diced ham
1
tablespoon sliced green onion (1 medium)
2
tablespoons shredded Swiss cheese
2
tablespoons shredded Cheddar cheese

  • 1 Heat oven to 400°F. Spray cookie sheet with cooking spray. In small bowl, stir mustard and mayonnaise until smooth; set aside.
  • 2 Place biscuits on microwavable plate. Microwave uncovered on Medium (50%) 30 to 45 seconds, turning over halfway through microwave time. (Biscuits should still be cold for easier handling.) On cookie sheet, press and stretch each biscuit into 5-inch round. Bake biscuits 6 to 8 minutes or until golden brown.
  • 3 Meanwhile, in 6- to 8-inch nonstick skillet, melt butter over medium heat. Pour eggs into skillet; beat. Sprinkle with ham. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portions can flow to bottom. Avoid constant stirring. Cook 3 to 4 minutes or until eggs are thickened throughout but still moist.
  • 4 Spread mustard mixture on each biscuit. Top each with egg mixture. Sprinkle with onion and cheeses. Bake 3 to 4 minutes or until hot and cheese is melted.

Made these for a brunch on Sunday. Used Pillsbury flaky layers. Was in a hurry and did not read the directions throughly. So, did it a little different. Had no ham, so used pepperoni, Italian mixed cheese instead of Swiss. Cooked the eggs, added the pepperoni, cheese, mayo and mustard, and topped each flattened biscuit with a tablespoon full. Baked about 12 min and golden. They were soooo good.

The reason they say to use the frozen biscuits is because it's cooking for two, and you just grab the amount you need from the frozen bag. Two people aren't going to make 8 pizzas.

I've made a couple variations of this recipe. The original is amazing though. I don't use frozen biscuits, I use the refrigerated tubes. They work the same with a lot less work. Really easy to make and easy to increase the number made at one. They also make great leftovers. Heat back up on the toaster oven to avoid a soggy trust. It is one of my favorite breakfasts.

I made these for my family last Saturday and they said it was the best thing they ever ate for breakfast. I have to admit they are awesome. The mayo and Dijon mustard is what really makes it. They wanted me to make them again for dinner. ( I laughed). I will be making them again this Saturday. I did use the Grands Biscuits in the tube and I used an Italian 6 cheese blend instead of the cheddar. DELISH!!!!!!

Why not use the grands biscuits that come in the tube, found in the refrigerator section. I have used these many times to make little pizzas.
