Ham-Pecan Tossed Salad

Sweet and crunchy caramelized pecans and fruit make this spinach-iceberg lettuce salad ideal for a special luncheon. Pass a basket of assorted small rolls or miniature muffins as an accompaniment.

Ingredients

DRESSING

cup oil

SALAD

cups torn iceberg lettuce

cups torn fresh spinach

cups cubed cooked ham

cup seedless red grapes, halved

cup sliced green onions

(11-oz.) can mandarin orange segments, chilled, drained

cup caramelized pecan halves*
  • 1 In small jar with tight-fitting lid, combine all dressing ingredients; shake well.
  • 2 In large bowl, combine all salad ingredients except pecans; toss gently. Pour dressing over salad; toss to coat.
  • 3 Just before serving, add pecans; toss gently.
