Heat oven to 400°F. Bake biscuits as directed on can.
Meanwhile, in small bowl, combine honey and mustard; blend well. Place 1 ham slice on each cheese slice. Cut each stack into 4 squares.
Split warm biscuits. Spread each biscuit half with 1/2 teaspoon honey-mustard mixture. Stack 2 squares of ham and cheese on bottom half of each biscuit. Top with lettuce leaves; cover with top halves of biscuits.
