Halibut with Noodles in Ginger Soy Sauce

Noodles, tossed with an appealing Asian-seasoned sauce, set off the peppery halibut fillets.

oz. (2 1/2 cups) uncooked plain or spinach egg noodles

teaspoon coriander
1/4
teaspoon pepper
1/8
teaspoon garlic powder
1
lb. halibut fillets
1
tablespoon chopped fresh cilantro
1
tablespoon chopped green onions
1/2
teaspoon grated gingerroot
1/2
teaspoon sugar
1
tablespoon rice vinegar
1
tablespoon soy sauce

Steps

  • 1 In large saucepan, cook noodles to desired doneness as directed on package. Drain; return to saucepan. Cover to keep warm.
  • 2 Meanwhile, in small bowl, combine coriander, pepper and garlic powder; sprinkle half of mixture on one side of halibut fillets.
  • 3 Spray medium nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot. Place fish, seasoned side down, in hot skillet; cook 2 to 4 minutes. Sprinkle fish with remaining coriander mixture. Turn fish; cook an additional 2 to 4 minutes or until fish flakes easily with fork.
  • 4 In small bowl, combine cilantro, onions, gingerroot, sugar, rice vinegar and soy sauce; mix well. Toss cooked noodles with cilantro mixture. Serve noodles with fish fillets.
