lb lean (at least 80%) ground beef
1/4
cup chopped onion

cup Green Giant® Valley Fresh Steamers™ frozen mixed vegetables

cups Muir Glen® organic diced tomatoes, drained (from 28-oz can)

jar (12 oz) home-style beef gravy
1/4
teaspoon dried marjoram leaves
1/4
teaspoon pepper

Potatoes

1
cup water
2
tablespoons margarine or butter
1/2
teaspoon garlic salt
1/2
cup milk
1 1/3
cups mashed potato flakes
1
tablespoon chopped fresh parsley

  • 1 In 10-inch nonstick skillet, cook beef and onion over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain.
  • 2 Add all remaining Stew ingredients; mix well. Heat to boiling. Reduce heat to low; simmer 8 to 10 minutes, stirring occasionally, until vegetables are tender.
  • 3 Meanwhile, in medium saucepan, heat water, margarine and garlic salt to boiling. Remove from heat; add milk. Stir in potato flakes and parsley. Cover to keep warm.
  • 4 To serve, fluff potatoes with fork. Serve stew over potatoes.

My family really enjoyed this. I did tweak it a bit, instead of boxed potatoes I mashed up some russets, and for the veggies I used broccoli and corn. I have made this twice already and will make again.

I am surprised at all the great reviews. I thought this was not very good. It had flavor, just not the kind my family liked. I will not be making this again.

Great quick recipe. Next time I would only use a 14 oz can of tomatoes. Would be enough and less wasteful. I did use mashed potatoes from the refrig section of the grocery since I am not a fan of instant. Will be making this one again.

Next time would use just a 14 oz can of diced tomatoes instead of the full 2 cups. Would be plenty in the stew and would be less wasteful.

I normally don't write a review if I used different ingredients than what is called for (only because I don't have them on hand). In this case I thought I could pull this off using my own homemade beef gravy, fresh carrots, canned string beans, frozen corn and no marjarom. Long story short...this is a great recipe. If mine came out good, I can only imagine how good the recipe is using all the ingredients listed. I will try again when everything is on hand. Best of all, my husband liked it!
