Ground Beef Risotto

Rice is twice as nice in this recipe—it’s a side and main dish in one!

lb lean (at least 80%) ground beef

small onion, chopped (1/4 cup)

cloves garlic, finely chopped

teaspoon pepper

cup uncooked Arborio or regular long-grain white rice

cups Progresso® beef flavored broth (from 32-oz carton)
1/2
cup shredded carrot
1/2
cup shredded fresh Parmesan cheese

tablespoons chopped fresh chives

  • 1 In 12-inch nonstick skillet, cook beef, onion, garlic and pepper over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain if desired. Stir in rice; cook 2 minutes, stirring constantly.
  • 2 Stir in broth; heat to boiling. Reduce heat to medium-low. Cover; simmer 10 minutes.
  • 3 Stir in carrot. Cook uncovered 5 to 7 minutes longer or until liquid is absorbed.
  • 4 Remove skillet from heat. Stir in cheese. Cover; let stand 3 minutes. Sprinkle with chives.

Expert Tips

If you use regular long-grain white rice instead of the Arborio rice, the finished dish will be less creamy with more separate, distinct rice grains. The reason: regular white rice doesn't contain as much starch as Arborio rice does.

Serve this meaty risotto with a Caesar salad and French bread for an easy weeknight meal.

A favorite in our house! I added chopped red pepper to the onion and garlic and then added broccoli and sugar snap peas in with the carrot (also doubled the carrots). Finally finished with some green onion instead of chive. I also throw in more spices with the meat, instead of just pepper. Usually some basil and oregano.

Instead of carrots I added sweet corn and pinto beans into it. It add more flavor and tasted great!

This is quick and simple. It taste good as well but I had to add sweet corn and beans into it....it gave it more of a taste..we enjoyed it.

I made a small change to the recipe that made it super yummy, Instead of carrots I chopped up stewed whole tomatoes and let it simmer then I made a bag of the green giant steam fresh veggies ( garden blend) and mixed it in a bowl topped it with fresh avocado and the mozzarella. My family loved it!!
