A favorite in our house! I added chopped red pepper to the onion and garlic and then added broccoli and sugar snap peas in with the carrot (also doubled the carrots). Finally finished with some green onion instead of chive. I also throw in more spices with the meat, instead of just pepper. Usually some basil and oregano.

Instead of carrots I added sweet corn and pinto beans into it. It add more flavor and tasted great!

I made a small change to the recipe that made it super yummy, Instead of carrots I chopped up stewed whole tomatoes and let it simmer then I made a bag of the green giant steam fresh veggies ( garden blend) and mixed it in a bowl topped it with fresh avocado and the mozzarella. My family loved it!!

This is one of my family's favorite dishes. I substitute ground turkey for the ground beef. I also use Uncle Ben's brown rice (I even use the seasoning packet). I make this at least once a month.
