Grilled Spicy Chicken Sandwiches

frozen crusty French dinner rolls
4
boneless skinless chicken breasts
1/4
teaspoon salt
1/4
teaspoon pepper
4
slices (1 oz each) Havarti or Monterey Jack cheese
1/2
cup peach preserves
1/4
teaspoon crushed red pepper flakes
Lettuce leaves, if desired

  • 1 Bake dinner rolls as directed on package. Heat gas or charcoal grill. To flatten each chicken breast, place chicken between 2 pieces of plastic wrap or waxed paper. Working from center, gently pound chicken with flat side of meat mallet or rolling pin until about 1/2 inch thick. Sprinkle chicken with salt and pepper.
  • 2 When grill is heated, place chicken on gas grill over medium heat or on charcoal grill over medium coals; cover grill. Cook 6 to 8 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F). Slice each chicken breast in half crosswise. Slice each piece of cheese in half; top each chicken breast piece with slice of cheese; cook 1 minute longer or until cheese is melted.
  • 3 In small bowl, mix peach preserves and pepper flakes. Slice rolls; place chicken on bottom halves of rolls. Top each with 1 tablespoon preserves mixture. Cover with top halves of rolls.

To add creaminess to this tasty sandwich, spread bottom half of each roll with 1 tablespoon mayonnaise before topping with chicken. Add a crunch with fresh lettuce leaves.

We liked these. I could not find the rolls at any grocery store (I think Pillsbury may have discontinued them since posting this recipe - they aren't even listed under "products" here on the site), but I found a good subsitute. Pillsbury has a "crusty French bread loaf" in the refrigerated dough aisle. I assume it the same bread as the "crusty French bread frozen rolls" the recipe calls for. I baked one loaf up and cut it into fourths, for four sandwiches. Two loafs would be enough for all eight sandwiches. I recommend doing that.

I had a cookout last Saturday for my friend- -it was her 65th birthday. There were about 45 people. I had as one of the meats the Grilled Spicy Chicken Sandwiches. Everyone loved them-especially with the crusted rolls- -that''s what made the sandwich. I had to e-mail the recipe to about 10 people the next day. Thanks for the recipe- -Gloria

we made this when we went camping a couple of years ago. (obviously we had to use french bread sandwich loaves instead of the dinner rolls for lack of an oven) even our 2 picky boys liked it. very good!

I made these sandwiches for my husband and son one night and they didn''t even leave crumbs.

Though I live in the "Peach State," I did not use the peach preserves that the recipe called for. No one in my family complained about the omission, and even questioned why a spicy chicken sandwich would have such an ingredient. That aside, the sandwiches were a hit with everybody.
