Grilled Marinated Shrimp

Ingredients

  • 1/2 teaspoon grated lime peel
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon dried oregano leaves
  • 1/8 teaspoon salt
  • 2 tablespoons olive or canola oil
  • 2 tablespoons lime juice
  • 2 cloves garlic, finely chopped
  • 1 lb uncooked deveined peeled large shrimp

    Heat gas or charcoal grill. In medium bowl, mix all ingredients except shrimp. Add shrimp; toss to coat. Let stand at room temperature 10 minutes to marinate.

    Remove shrimp from marinade; thread loosely onto 4 (12- to 14-inch) metal skewers. Reserve marinade.
  • 3
    Place skewered shrimp on grill over medium heat. Cover grill. Cook 3 to 7 minutes, turning once and brushing occasionally with reserved marinade, until shrimp turn pink. Discard any remaining marinade.
