Grilled Marinated Shrimp

Ingredients

teaspoon grated lime peel

teaspoon ground cumin

teaspoon dried oregano leaves

teaspoon salt

tablespoons olive or canola oil

tablespoons lime juice

cloves garlic, finely chopped

lb uncooked deveined peeled large shrimp
  • 1 Heat gas or charcoal grill. In medium bowl, mix all ingredients except shrimp. Add shrimp; toss to coat. Let stand at room temperature 10 minutes to marinate.
  • 2 Remove shrimp from marinade; thread loosely onto 4 (12- to 14-inch) metal skewers. Reserve marinade.
  • 3 Place skewered shrimp on grill over medium heat. Cover grill. Cook 3 to 7 minutes, turning once and brushing occasionally with reserved marinade, until shrimp turn pink. Discard any remaining marinade.
