Ingredients

Fish

(4-oz.) red snapper fillets, or 1 lb. tuna steaks, cut into 4 pieces

teaspoon salt
Dash pepper

cup chopped fresh basil
1/4
cup chopped fresh cilantro
1/3
cup fresh lemon or lime juice

Salsa

(7-oz.) can Green Giant™ Niblets® Whole Kernel Sweet Corn, drained

cup chopped red onion
1/4
cup chopped fresh parsley

garlic cloves, minced
1
jalapeno chile, seeded, minced
2
tablespoons vinegar
1
tablespoon olive oil or oil
1/4
teaspoon salt
1/8
teaspoon pepper

Directions

  1. 1 GRILL DIRECTIONS: Heat grill. Sprinkle fish fillets with 1/8 teaspoon salt and dash pepper. Pat basil and cilantro on 1 side of each fillet; place herb side up in shallow dish. Spoon lemon juice over herbs. Let stand at room temperature for 10 to 15 minutes to marinate.
  2. 2 Meanwhile, in large bowl, combine all salsa ingredients; mix well. Cover; refrigerate until serving time.
  3. 3 When ready to grill, lightly oil grill rack. Place fillets, herb side up, on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 8 to 10 minutes or until fish flakes easily with fork, turning once.
  4. 4 To serve, spoon salsa over fish fillets. If desired, garnish with additional fresh basil or cilantro.
