Grilled Curry Chicken Sandwiches

frozen soft white dinner rolls (from 12.4- or 37.2-oz bag)
2
boneless skinless chicken breasts (about 8 oz)

teaspoon salt
1/4
teaspoon lemon-pepper seasoning

tablespoon mayonnaise or salad dressing
1/4
teaspoon curry powder
2
lettuce leaves, halved

  • 1 Heat gas or charcoal grill. Cut 4 (16x12-inch) sheet of heavy-duty foil. Wrap rolls in foil. Sprinkle both sides of chicken breasts with salt and lemon-pepper seasoning.
  • 2 Carefully oil grill rack. Place chicken on grill over medium heat. Cover grill; cook 8 to 10 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F). To heat dinner rolls, place foil-wrapped rolls on grill for last 5 to 6 minutes of cook time; heat, turning once, until hot.
  • 3 Meanwhile, in small bowl, mix mayonnaise and curry powder. With serrated knife, cut each roll in half crosswise. Place piece of lettuce on bottom of each roll. Cut each chicken breast in half; place over lettuce. Top with dollop of mayonnaise mixture and top of roll. Secure with toothpick.

I really dug the sauce on this. Extremely tasty and have used it for regular sandwiches as well. I had to use different rolls but this recipe was awesome. Even the youngest family member liked it.

I can't have mayo so I mixed the curry powder w/lowfat yogurt & low fat sour cream. It worked great. Instead of the white rolls I used whole what pita. This is a great starter recipe that you can build on and mix it up. Experiment a little with different types of curry powder for more variety. Really tasty. This one is a keeper.
