Making grilled cheese for a crowd is easy with four ingredients, including cocktail rye bread. Have them ready in less than 30 minutes!

2
tablespoons butter or margarine
24
slices cocktail rye or sourdough bread
12
slices cracker-cut sharp Cheddar cheese (from 6-oz package)
3
slices (about 1 oz each) American cheese, cut into quarters

Steps

  • 1 Set oven control to broil. Place butter in small microwavable bowl; cover with microwavable paper towel. Microwave on High 30 to 50 seconds or until melted. Brush butter on 1 side of each bread slice.
  • 2 On ungreased cookie sheet, place 12 bread slices, buttered sides down. Top each with 1 slice Cheddar cheese and 1 quarter-slice American cheese. Add remaining bread slices, buttered sides up.
  • 3 Broil with tops 4 to 6 inches from heat 2 minutes. Turn sandwiches over. Broil about 1 minute longer or until golden brown and cheese is melted.

Expert Tips

Serve these sandwiches topped with a sprig of thyme and a cherry tomato speared with a toothpick.

These sandwiches can be assembled up to 8 hours before broiling. Place them on a cookie sheet, cover with plastic wrap and refrigerate. Broil as directed.
