I only cook on an open fire place on my deck so i always do my beer can chicken in the oven. I place it in a store bought foil pan and pour some of the beer into the pan before putting the chicken on, the alcohol evaporates and makes the best drippings you can imagine, we did this at our hunting camp and it was the best gravy EVER! Moist and delicious.
