Wow! This was super simple and turned out perfectly! I followed the recipe using a dark Irish beer and the weight of my chicken was 5 lbs. I couldn't fit the chicken and brine in a zip top bag, so I put it in a pot with a tight fitting lid. I grilled it for two hours to adjust for the weight. I've used a beer marinade before with poor results, but this recipe was spot on. To my surprise the skin of the chicken grilled up crips and golden brown; with other recipes the skin would not get crisp. Not only was the meat tender and juicy, but very flavorful. This is definitely a keeper :-)
