Grilled Barbecue Chicken Pizza

If you've never tried cooking pizza on the grill, give this delicious cheesy chicken version a try, made ultra-easy with refrigerated pizza dough.

Ingredients

can (11 oz) Pillsbury® refrigerated thin pizza crust
2
cups cubed cooked chicken
1/2
cup barbecue sauce
1
teaspoon chili powder
1
cup shredded Monterey Jack cheese (4 oz)
1/4
cup finely chopped red onion
1/4
cup finely chopped green bell pepper

  • 1 Heat gas or charcoal grill to medium heat. Cut 14 x 14-inch heavy duty foil; spray with cooking spray. Place dough on foil; starting at center, press dough to 12-inch round. Place dough on grill, foil side down. Cook, uncovered, 3 minutes or until bottom of crust is light golden brown. Remove from grill.
  • 2 Using wide spatula, flip crust over so uncooked side is down. In small bowl, combine chicken, barbecue sauce and chili powder; mix well. Spread chicken evenly over pizza crust. Sprinkle with cheese, onion and bell pepper.
  • 3 Place pizza onto grill, foil side down. Cook, covered, an additional 3 to 4 minutes or until crust is golden brown and cheese begins to melt.

Used a pre-made crust. Tasted great from the grill.

I baked my pizza in the oven. it turned out great! @iclark10, I just pre-baked the crust (i used the thin crust) like the package directions. Then topped the pizza and baked for about another 10 minutes.

Could someone share their info on how they baked it! Temp, pre-baked crust?, and how long it took to bake!

Great Pizza! I didn't cook it on a grill I actually cooked it in a oven, but it was a huge hit and my family is hard to please! I used Pretzel Pizza crust from Anne's Pretzels in a box instead of normal pizza crust. You can get it at Kroeger's, it was delicious! I will defiantly be keeping this one in my recipe box! Note: if I had to change anything I would probably add more peppers and onions. And, I used the cheapest barbecue I could find so anything will work.

This recipe was quick, easy and delicious! I would definitely recommend it. I don't think it takes the 20 minutes that it says more like 10-15 minutes. Very yummy!
