A family favorite! We use turkey after holidays, but canned chicken chunks the rest of the time. Very adaptable recipe - for those who don't like the enchilada sauce, we spray the bottom of a small Pyrex dish with canola oil, and place the enchilada (sans sauce), with a little extra cheese, but otherwise following the recipe.
