I have made a mexican casserole in the past and use flour tortilla strips. When these mix with the sauce and bake, the texture is just like an old fashion egg noodle and very good. Might try this with them instead for those that didn't like the lasagna noodle.

Awful. Greasy. Expensive. The ricotta cheese does not go well with Mexican Cuisine. Noodles do not scream Mexican either. Maybe if the noodles were replaced with sliced tomatoes it would be better. Definitely leave out the ricotta cheese.
