Green Beans with Feta

Ingredients

lb fresh green beans, trimmed

tablespoons vegetable or olive oil

tablespoon tarragon vinegar

tablespoons chopped red onion

teaspoon salt

teaspoon pepper

clove garlic, finely chopped

cup crumbled feta cheese (2 oz)

Directions

  1. 1 In 6-quart saucepan, heat 1 inch water and beans to boiling; reduce heat. Simmer uncovered 8 to 10 minutes or until crisp-tender; drain.
  2. 2 In large bowl, place beans. Add remaining ingredients except feta cheese; toss to coat.
  3. 3 Top with feta cheese; serve warm.
