My spouse Chef Jeff made this with chicken thighs put them on the bottom of the pan, then pour the soup, green beans and fried onions over top. It was to die for...You could use deboned chicken as well. It was sooo good.

Okay Joey119 this is what I suggest grab the regular can of cream of mushroom soup (store brand or campbells) but prior to adding the soup saute some sliced fresh mushrooms (maybe with some garlic and a splash of white wine) and add them to the soup.You could do button or creminis,which are baby portobello mushrooms!

I was surprised to see this recipe using Progresso Cream of Mushroom Soup! We love this soup because it actually has slices of mushrooms not the little specs of mushrooms in another popular brand soup....but we have not been able to find it in any of our grocery stores here in NC. I have asked the store managers at Harris Teeter, Walmart Super Centers, and the military commissary...where we shop. They tell me it's not in their distribution centers so I thought Progresso stopped making it. It's been about 2 years since I have been able to purchase this soup. Is anybody else having this problem?

Also try adding 1 cup shredded cheddar cheese, or if you like a nice crunch try adding a can of water chestnuts.

I make this every Christmas and Thanksgiving Dinners. I am on a low carb diet so the rest of the year I sautee green beans (drained) and mushrooms together with just a little butter and garlic. Both of these are so easy to make!!!

I've used cream of celery soup & worked fine...just a personal preference but I use frozen whole [thin] green beans thawed....my kids prefer it too...for the holidays I add some sauted shallots...& don't tell have been known to throw in Hormel Bacon Bits.

I'd just divide into small casserole pans & cook. Maybe a 11x7 would work for her. Personally I've gotten totally away from the can green beans and use the frozen whole [thin] green beans thawed....just my preference.

I also use Cream of Chicken sometimes when making the casserole. This year proposes an obstacle with the host's residence having too small of an oven to cook the amount needed. Has anyone tried using a crock pot or slow cooker to cook the casserole?

Since I am allergic to mushrooms, I always use Cream of Chicken soup. It has a slightly different taste and the color of the dish is not grey. My family likes it made with cream of chicken soup much better.
