uncooked lasagna noodles

eggs, slightly beaten

(24-oz.) container (3 cups) cottage cheese

(9-oz.) pkg. frozen spinach in a pouch, thawed, squeezed to drain*

cup finely chopped onion
1/4
cup chopped fresh parsley or 3 teaspoons dried parsley flakes

teaspoon garlic powder
1/2
teaspoon salt
1/4
teaspoon pepper

oz. (3 cups) shredded mozzarella cheese
1/2
cup grated Parmesan cheese

Directions

  1. 1 Cook noodles to desired doneness as directed on package. Drain.
  2. 2 Heat oven to 350°F. In medium bowl, combine eggs, cottage cheese, spinach, onion, parsley, garlic powder, salt and pepper; mix well.
  3. 3 In ungreased 13x9-inch pan, layer 1/3 each of the cooked noodles, spinach mixture and mozzarella cheese; repeat layers twice. Sprinkle with Parmesan cheese.
  4. 4 Bake at 350°F. for 35 to 45 minutes or until hot and bubbly. Let stand 10 minutes before serving.
