(24-oz.) container (3 cups) cottage cheese

(9-oz.) pkg. frozen spinach in a pouch, thawed, squeezed to drain*

cup finely chopped onion

cup chopped fresh parsley or 3 teaspoons dried parsley flakes

teaspoon garlic powder

  • 1 Cook noodles to desired doneness as directed on package. Drain.
  • 2 Heat oven to 350°F. In medium bowl, combine eggs, cottage cheese, spinach, onion, parsley, garlic powder, salt and pepper; mix well.
  • 3 In ungreased 13x9-inch pan, layer 1/3 each of the cooked noodles, spinach mixture and mozzarella cheese; repeat layers twice. Sprinkle with Parmesan cheese.
  • 4 Bake at 350°F. for 35 to 45 minutes or until hot and bubbly. Let stand 10 minutes before serving.

* To quickly thaw spinach, cut small slit in center of pouch; microwave on HIGH for 2 to 3 minutes or until thawed. Remove spinach from pouch; squeeze dry with paper towels.

Prepare recipe as directed; do not bake. Cover with foil; freeze. When ready to use, do not thaw; bake, covered, at 350°F. for 1 1/2 hours. Uncover; bake an additional 15 minutes or until mixture is thoroughly heated. Or cover; refrigerate up to 24 hours before baking. Uncover; bake at 350°F. for 45 to 50 minutes.
