Greek Salad Pinwheels

1.Cucs- scrape seeds out after peeling and slicing lengthwise in half,then dice,and put in mesh strainer while moving on with recipe, pat dry on paper towel prior to mixing. 2.Tomato- seed tomato, dice and pat dry prior to mixing also 3.Lightly toast roll(tie with string on both ends to hold together) on very hot cast iron griddle, or pan, quickly, so it just slightly toasts on raised areas, remains soft. This lends an authentic taste to this Greek inspired dish. 4.Refrigerate in covered container at least 30 mins before slicing.

My family and I loved this. It seems so simple (and it is) but the flavor is so much more. I'm making it for a wedding shower next. I did leave out the olives since my family does not like them. Didn't miss them. Tastes very fresh.
