LOCATION
In Italian, "minestrone" means "big soup." Traditional Italian minestrone is thick vegetable soup made with pasta and beans or peas. Liberally garnished with grated parmesan cheese, minestrone is hearty enough to stand alone as dinner. Our Greek-style minestrone calls for orzo pasta and oregano.
The remaining 1/2 pound of ground beef can be wrapped and frozen for later use in Beef and Bean Wraps, Supreme Beef Pizza or Pasta and Burger Beer Cheese Soup.
For more Greek flavor, crumble feta cheese over the piping-hot soup just before serving.
