Add a Mediterranean twist to your chicken burger by using pita bread, cucumber and roasted red pepper hummus. This flavorful grilled dinner gets ready in 30 minutes!

Ingredients

  • 1 lb. ground chicken
  • 1/4 cup finely chopped onion
  • 1 1/2 teaspoons chopped fresh oregano or 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 (6 to 8-inch) pita (pocket) breads, cut in half, heated
  • 4 tablespoons purchased roasted red pepper hummus
  • 8 cucumber slices
  • 4 tomato slices

    Heat grill. In large bowl, combine chicken, onion, oregano, salt and pepper; mix well. Shape mixture into four 4-inch-long oval patties.

    When ready to grill, carefully oil grill rack. Place patties on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 13 to 15 minutes or until thoroughly cooked and no longer pink in center, turning once.

    Spread inside of each pita bread half with 1 tablespoon hummus. Line each with cucumber and tomato slices. Add chicken patty to each.

    To broil patties, place on broiler pan; broil 4 to 6 inches from heat using times above as a guide, turning once.

    Hummus is a thick sauce made from garbanzo beans mashed with garlic, lemon juice and olive oil. Tahini, or sesame seed paste, is often added and the resulting sauce is called hummus bi tahina. Very popular in the Middle East, hummus is served as a dip with pita bread. Check near the dips in the dairy case of the grocery store for a variety of hummus flavors.

    Feta, a Greek cheese made from sheep or goat's milk would give these burgers a tangy boost of traditional flavor. Crumble feta cheese and spoon 1 tablespoon inside each pita half.
