Grasshopper Cupcakes

Ingredients

  • 1 box devil's food cake mix with pudding in the mix
  • 1 1/3 cups water
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 container (12 oz) fluffy white whipped ready-to-spread frosting
  • 1/4 teaspoon peppermint extract
  • 4 drops green food color
  • 24 thin rectangular crème de menthe chocolate candies, unwrapped, each cut in half crosswise

    Heat oven to 350°F. Make cake mix into cupcakes as directed on box using water, oil and eggs. Cool completely, about 30 minutes.

    In small bowl, reserve 1/2 cup frosting for garnish. Into remaining frosting, stir peppermint extract and food color until well blended. Frost cupcakes with green frosting.

    Spoon 1 teaspoon reserved white frosting onto center of each frosted cupcake. Decorate each with 2 candy pieces, standing on edge.

  • If desired, you can garnish these grasshopper cakes with candy-coated chocolate candies instead of candy mints.
