Ingredients

salmon fillets, 1 inch thick (1 1/2 lb)
1/4
cup all-purpose flour
1
egg, beaten
1/2
cup Nature Valley™ oats 'n honey protein granola
1/4
cup Progresso™ plain panko crispy bread crumbs
1/2
teaspoon salt
1
tablespoon grated lemon peel
2
tablespoons grated Parmesan cheese
Additional salt and ground black pepper, if desired

Directions

  1. 1 Heat oven to 350°F. Line cookie sheet with foil, and spray foil lightly with cooking spray.
  2. 2 Coat salmon with flour; brush tops of salmon with egg, and place on cookie sheet. In food processor, place granola. Cover; process until large pieces are broken up and granola forms a coarse meal.
  3. 3 In large bowl, mix granola, bread crumbs and salt. Top salmon with granola mixture, lemon peel and cheese.
  4. 4 Bake 20 to 25 minutes or until fish flakes easily with fork. Sprinkle with additional salt and ground black pepper.
