Very delicious! I didn't have any apple pie filling on hand, so I made my own on the stove with an apple, some butter, cinnamon, and brown sugar. Also, using the aluminum muffin liners makes things much easier; paper liners absorb the butter/oil from the crust and make the paper stick and feel very greasy when handling.

I made this cheesecake about a week ago for my boyfriend's family. Everyone [including myself] loved it! But I didn't make mini cheesecakes, I made one large cheesecake and instead of apple pie filling [couldn't find any in the store] I made a double berry sauce to go on top. My favorie part was the crust! And I did have to bake it a little longer than 25 min [b/c it was one large cake] but it was still very moist and creamy!

Made these yesterday....brought to my friends....got a call last night with this statement "WOW, You really outdid yourself...these cheesecakes were wonderful!" Guess they will go in my special recipe folder...to make again and again.... I did try them...and thought they were great as well....my son was also in agreement.
I especially liked it cause it has diabetic values...and I am a diabetic...
