Ingredients

1/2
lb bacon, chopped
1
cup diced (1/4 inch) peeled russet baking potato
1
large onion, chopped (1 cup)
1
can (16.3 oz) Pillsbury™ Grands!™ refrigerated biscuits

Directions

  1. 1 Heat oven to 375°F. Lightly grease cookie sheet with shortening or cooking spray.
  2. 2 In 10-inch skillet over medium heat, cook bacon until crisp. Remove from skillet with slotted spoon; drain on paper towels. Cook potato and onion in bacon drippings over medium heat until tender; drain on paper towels. In medium bowl, mix potato mixture and cooked bacon.
  3. 3 Separate dough into 8 biscuits. Press or roll each to form 6-inch round. Place on cookie sheet. Spoon about 1/4 cup bacon mixture onto center of each round. Fold dough in half over filling; press with fork to seal.
  4. 4 Bake about 15 minutes or until golden brown. Cool 5 minutes; serve warm.
