Pull each biscuit apart into 2 layers; press each into 4-inch round. Place 4 pieces of cheese on each of 5 of the rounds. Top with remaining rounds; press edges with fork to seal.
Heat 12-inch nonstick skillet over medium heat until hot. Spray each sandwich on both sides with cooking spray. Place 3 sandwiches in skillet. Cook 4 to 6 minutes, turning once, until golden brown on both sides and cheese is melted. Repeat with remaining sandwiches.
