Heat oven to 375°F. Spray 20 miniature muffin cups with cooking spray.
In medium bowl, mix chicken, 3 tablespoons cilantro, bell pepper and peanut sauce; set aside.
Separate dough into 5 biscuits. Cut each biscuit into fourths. Flatten each dough piece. Place 1 piece in each muffin cup; firmly press in bottom and up side of cup.
Spoon and press about 2 teaspoons chicken mixture into each dough-lined cup.
Bake 12 to 16 minutes or until golden brown. Remove from muffin cups. Sprinkle with remaining cilantro.
