lb lean (at least 80%) ground beef

package (1 oz) Old El Paso® taco seasoning mix

cup water

can (16.3 oz) Pillsbury® Grands!® Homestyle southern style biscuits

cup ranch dressing
1/4
cup Old El Paso® Thick 'n Chunky salsa

cups shredded lettuce
1/4
cup chopped onion

cup shredded cheese (8 oz), if desired
8
pimiento-stuffed olives, cut in half

grape tomatoes, halved lengthwise

Directions

  • 1 Heat oven to 350°F. Cook beef, taco seasoning and water as directed on taco seasoning packet.
  • 2 Meanwhile, separate dough into 8 biscuits; press each into a 6-inch round. Place on ungreased cookie sheets.
  • 3 Bake 8 to 10 minutes or until golden brown, rotating pans halfway through bake time. In small bowl, mix ranch dressing and salsa.
  • 4 To assemble each chalupa, layer beef mixture, lettuce, onion and cheese on half of each warm biscuit round. Fold unfilled half over cheese to form chalupa. Use toothpicks to secure filled chalupa, and attach olive halves on top to look like eyes. Use quartered tomatoes for teeth. Drizzle with ranch sauce mixture.

Cute idea. The picture startled me at first glance. Sure is smiling, isn't it? LOL. Should appeal to the young at heart but be sure to warn people about the toothpicks. Be awfully careful with toothpicks and small children.

This recipe was easy and tasted great. I put the sauce inside the Chalupa, over the meat and cheese, then added the lettuce and tomato. Leftovers are easily heated in the microwave. Delicious!

I haven''t made this yet, but it just looks so delicious. It is also healthy, economical and fun.
