Ingredients

tablespoons margarine or butter, softened

cup sugar

teaspoon vanilla

egg

cup all-purpose flour

teaspoon baking powder
1/4
teaspoon salt

(16-oz.) can apricot halves, well drained

tablespoons sugar
1/2
teaspoon cinnamon

Directions

  1. 1 Heat oven to 375°F. Spray 9-inch round cake pan or springform pan with nonstick cooking spray.
  2. 2 In large bowl, combine margarine and 1/3 cup sugar; beat until well blended. Add vanilla and egg; beat well. Stir in flour, baking powder and salt. Spread dough evenly in bottom of sprayed pan.
  3. 3 Arrange apricot halves over dough. In small bowl, combine 2 tablespoons sugar and cinnamon; sprinkle over apricots.
  4. 4 Bake at 375°F. for 20 to 25 minutes or until edges are golden brown. Cool 5 minutes.
