5: tablespoons margarine or butter, softened

1/3: cup sugar

1: teaspoon vanilla

1: egg

1: cup all-purpose flour

1/2: teaspoon baking powder

1/4: teaspoon salt

1: (16-oz.) can apricot halves, well drained

2: tablespoons sugar

1/2: teaspoon cinnamon

Directions

1 Heat oven to 375°F. Spray 9-inch round cake pan or springform pan with nonstick cooking spray.
2 In large bowl, combine margarine and 1/3 cup sugar; beat until well blended. Add vanilla and egg; beat well. Stir in flour, baking powder and salt. Spread dough evenly in bottom of sprayed pan.
3 Arrange apricot halves over dough. In small bowl, combine 2 tablespoons sugar and cinnamon; sprinkle over apricots.
4 Bake at 375°F. for 20 to 25 minutes or until edges are golden brown. Cool 5 minutes.
