Ingredients

  • 5 tablespoons margarine or butter, softened
  • 1/3 cup sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 (16-oz.) can apricot halves, well drained
  • 2 tablespoons sugar
  • 1/2 teaspoon cinnamon

    Heat oven to 375°F. Spray 9-inch round cake pan or springform pan with nonstick cooking spray.

    In large bowl, combine margarine and 1/3 cup sugar; beat until well blended. Add vanilla and egg; beat well. Stir in flour, baking powder and salt. Spread dough evenly in bottom of sprayed pan.

    Arrange apricot halves over dough. In small bowl, combine 2 tablespoons sugar and cinnamon; sprinkle over apricots.

    Bake at 375°F. for 20 to 25 minutes or until edges are golden brown. Cool 5 minutes.
