tablespoon chopped fresh mint

tablespoon chopped fresh parsley

tablespoon chopped fresh chives

slices cracked wheat bread

medium cucumber, peeled if desired, sliced

Directions

  1. 1 In small bowl, combine goat cheese, mint, parsley, chives and salt; blend well.
  2. 2 Spread mixture on 2 slices of the bread. Top with cucumbers and remaining slices of bread.
