Ingredients

  • 2 1/2 cups fresh baby carrots
  • 2 tablespoons brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ginger
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon caraway seed, if desired
  • 1 tablespoon butter, cut into small pieces
  • 1 teaspoon chopped fresh dill, if desired

    Heat grill. Place carrots in medium microwave-safe casserole; cover. Microwave on HIGH for 4 minutes. Drain.

    Cut 18x12-inch sheet of heavy-duty foil. Place carrots in center of foil. Sprinkle with all remaining ingredients except butter and dill. Dot with butter. Wrap packet securely using double-fold seals, allowing room for heat expansion.

    When ready to grill, place packet, seam side up, on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 20 to 25 minutes or until carrots are tender, rotating packet once.

    To serve, open packet carefully to allow steam to escape. Sprinkle carrots with dill.

    Caraway seed comes from a plant related to parsley. The tiny brown oblong seeds have a nutty, pungent aroma. Common in German, Austrian and Hungarian recipes, caraway seed is used in breads, cakes, cheese, soups, stews, meats and vegetables.
