Gingered Strawberry Shortcakes

Ingredients

  • 1 1/2 pints (3 cups) fresh strawberries, sliced
  • 1/4 cup sugar
  • 2 tablespoons chopped crystallized ginger
  • 4 individual sponge shortcake cups
  • 1/2 cup frozen whipped topping, thawed

    In medium glass bowl, combine strawberries, sugar and ginger; mix well. Let stand at least 30 minutes to blend flavors, stirring occasionally.

    To serve, place shortcakes on individual dessert plates. Spoon berries with juices evenly onto each shortcake. Top each with whipped topping.

  • Crystallized ginger is candied gingerroot rolled in sugar and dried. The sweet, spicy flavor enhances the flavor of breads, baked desserts and cream desserts. Seal crystallized ginger in an airtight container and store it at room temperature.
  • Refresh purchased shortcakes by warming them in the microwave for 5 to 15 seconds on HIGH before topping them with berries and whipped topping.
  • Sweetened berries may stand until some juice develops and the added sugar dissolves. This happens most quickly at room temperature. After 30 minutes, the berry mixture should be refrigerated.
