Gingered Strawberry Shortcakes

pints (3 cups) fresh strawberries, sliced

cup sugar

tablespoons chopped crystallized ginger

individual sponge shortcake cups

cup frozen whipped topping, thawed
  • 1 In medium glass bowl, combine strawberries, sugar and ginger; mix well. Let stand at least 30 minutes to blend flavors, stirring occasionally.
  • 2 To serve, place shortcakes on individual dessert plates. Spoon berries with juices evenly onto each shortcake. Top each with whipped topping.
