Delicious! I couldn't find the Pillsbury refrigerated Gingerbread Dough so I had to substitute Gingerbread Cookie Mix Pouch 17.5 oz. by Betty Crocker. The only change I plan to make in this recipe is substitute coarse sugar crystals for the sugar. I will definitely make these cookies next Christmas!

these are great!! Make sure roll out between waxed paper. And re-chill. Roll up and rechill what you don't use right away. When you do cut use a serated knife and dip in warm water between cuts. Your cuts will be more clean and the lines of dough won't merge. People who don't care for gingerbread will love them!!

This was So good. Everybody that tried them loved them. I had no trouble doing the rolling and cutting like other people did. I even made another roll and put it freezer for my family for later.

I found this a difficult cookie to rool - dough breaks very easy. The cookie is tasty but its appearance varied as it baked.I would make it again however, the difference between sugar and gingerbread makes it appealing.

I made these last year at Christmas. I thought the difference in texture between the gingerbread and the sugar cookie didn't blend well. The gingerbread baked much harder than the crispy sugar cookie. Too time consuming.

I finally found the gingerbread cookie dough, Pillsbury needs to have this dough available year round. Very hard to make a tight roll for a novice baker. After the 4th part of the cookie roll, I finally got them to look like pinwheels. Any tricks on how to get the two doughs tighter? I have pictures but don't see anywhere to put them. Taste really good and is time consuming. I will probably try again.

I made these for Christmas goody bags. My kids and I ate all the ones that "broke", and now they want some more. Everyone who recieved them commented on how nice they looked and then how great the tasted. I just might have to make some gingerbread cookie dough myself, since it's nearly impossible to find it after Christmas in the stores. I'll try other flavors one of these days too.

These are great cookies. A little time consuming, but worth it. They turn out pretty and everyone asks how you did it.
