German Potato and Sausage Casserole

bag (28 oz) frozen potatoes O'Brien with onions and peppers, thawed

can (14 oz) sauerkraut, drained, rinsed
1
can (10 3/4 oz) condensed cream of potato soup
1 1/3
cups half-and-half
Paprika
1
lb cooked kielbasa or Polish sausage, cut into 6 pieces

  • 1 Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In baking dish, mix potatoes and sauerkraut.
  • 2 In medium bowl, mix soup and half-and-half. Stir soup mixture into potato mixture; mix well. Sprinkle with paprika.
  • 3 Bake 20 minutes. Arrange sausage pieces over potato mixture, pressing lightly into mixture. Bake 25 to 30 minutes longer.

This should be called "Polish Potato and Sausage Casserole" or "Potato and Kielbasa Casserole", since it uses kielbasa. If you want to make it German, use one of the various German sausages instead of kielbasa. The kraut and potatoes work with Polish, German, Ukrainian, Russian, and other dishes, but the choice of sausage is the differentiating factor here.
