Garlic Beef Cubes

Bite-sized beef cubes are a hearty addition to an appetizer buffet. The creamy horseradish dip packs some punch.

Ingredients

lb beef tenderloin, cut into 48 (about 1-inch) cubes

teaspoon salt

teaspoon pepper

tablespoons olive or vegetable oil

cloves garlic, pressed

cup mayonnaise or salad dressing

tablespoons sour cream
1/4
cup finely chopped drained sun-dried tomatoes in oil

tablespoon prepared horseradish
1
tablespoon chopped fresh parsley
  • 1 Sprinkle beef cubes with salt and pepper. In 10-inch skillet, heat oil and garlic over medium-high heat, stirring frequently, until garlic is toasted (be careful not to burn garlic). Remove as much garlic as possible from skillet; discard.
  • 2 Add beef cubes to skillet. Cook 4 to 5 minutes, stirring occasionally, until brown on all sides and desired doneness; drain.
  • 3 Meanwhile, in small bowl, mix mayonnaise, sour cream, tomatoes and horseradish. Spoon beef cubes into serving bowl or onto platter; sprinkle with parsley. Serve with toothpicks for dipping into sauce.
